Planning
How many skewers per person, and how much meat to buy
Rules of thumb rather than laws. Use them to pick a grill size and to shop, then adjust once you know your own crowd.
Start with weight, then convert
Catering planning works in grams of trimmed meat per adult, and it is more reliable than counting skewers because skewer sizes vary so much.
| Situation | Trimmed meat per adult | Notes |
|---|---|---|
| Skewers as part of a spread | Around 200 to 250 g | Salads, bread, dips and sides carrying half the meal |
| Skewers as the main event | Around 300 to 400 g | A meat-focused gathering with light sides |
| Arrosticini or similar, eaten in bundles | Often more | They are small, fast and people lose count |
| Children | Roughly half an adult portion | Plan generously anyway |
Buy on raw trimmed weight, and add a little for what you lose in trimming if you are cutting down a whole piece yourself.
Converting to skewers
A typical loaded skewer carries somewhere around 80 to 100 g of meat. On that basis:
- As part of a spread: roughly two to three skewers per adult.
- As the main event: roughly three to five.
- Arrosticini: they are much smaller, and a serving is a bundle rather than a piece. Plan on a lot more, and expect to be wrong on the low side.
Sizing the grill
Take your number of skewers and divide by how many rounds you are willing to run. Each round is roughly ten to fifteen minutes including loading, so two rounds is comfortable and four is a long night at the fire.
| Cooking for | As a spread | Suggested rack |
|---|---|---|
| 4 to 6 people | About 12 to 18 skewers | 16, in one or two rounds |
| 8 to 10 people | About 20 to 30 skewers | 24, in one or two rounds |
| 12 to 16 people | About 30 to 48 skewers | 32, or the large frame |
| 20 plus | About 50 and up | The large frame, cooking in rounds |
These assume skewers as part of a spread. If skewers are the whole meal, move up a size.
The thing most people underestimate
Not the quantity. The turning.
Thirty skewers over direct coals all want turning inside the same short window. If you are turning them one at a time, the practical ceiling on a single round is much lower than the grill’s physical capacity, because the row drifts apart in doneness faster than you can work down it.
That is the reason the frames here gear the skewers together: capacity on the spec sheet only becomes capacity in practice if you can turn the whole row at once.
Sizing the frame to the number
Every frame takes the same rack, in 16, 24 or 32 skewers.
